FIVE ALARM RAIDER CHILI

Ingredients
- 1 TBL cumin seed
- 1/4 cup vegetable oil
- 2 Lbs ground sirloin (chili grind)
- 2 medium onions, chopped
- 2 cloves minced garlic
- 1 mild green chili pepper, seeded and minced
- 2 Serrano peppers, seeded and minced
- 1 large green pepper, chopped
- 1/2 cup chopped fresh parsley
- 2 Tbl chili powder
- 1 Tbl oregano
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp paprika
- 1 1/2 tsp cayenne pepper
- 3/4 tsp ground coriander
- 1 (14 1/2 oz.) can peeled tomatoes
- 3 cups beef stock or canned broth
- 1 cup beer
- 1 (8 oz.) can tomato sauce
- few dashes
Cholula sauce
- 1 bay leaf
In a small non-stick frying pan, toast cumin seeds
for 2 minutes. Remove from heat. Set aside. Heat
vegetable oil over medium high heat in large frying
pan. When hot add ground sirloin. Brown sirloin. Add
onions, garlic, all the peppers and parsley to frying
pan. Saute for 3 - 5 minutes. During this time add
the spices, stirring frequently. Pour mixture into
large soup pot. Add tomatoes with their juices, the
beef stock, beer, tomato sauce and Cholula. Stir. Add
bay leaf. Bring to boil. Cover and simmer over low
heat for 2 - 2 1/2 hours, stirring occasionally. Add
more liquid, if needed.
Garnish with:
- Sour cream
- Shredded Cheddar & Monterey Jack cheese
- 1 Avocado, sliced
- 1 medium onion, chopped
- Blue corn tortilla chips
